In the yard a cheeky little pig started to make a name for himself. Random mischievous acts were being encountered, often with a glimpse of a curly tail, scrambling away with the cutest of snorts. So infamous was this little character that he has landed himself on a bottle or two. This Little Pig is crafted by the award winning winemakers at Australian Vintage Ltd where skill, experience and modern winemaking techniques are utilised to produce a consistently high quality product in each and every bottle.
The fruit was selected from vineyards mainly from the Murray Darling region. The climate is hot with high evaporation rates & generally low rainfall making irrigation essential. The climate is also continental, resulting in long sunny days and noticeably cooler nights. Modern viticultural & winemaking techniques mean that the climate can be seen as one of the region's strengths. Long sunshine hours ensure fruit ripens fully & low relative humidity results in little incidence of disease
All fruit was harvested at optimum temperatures in the cool of the night. Fruit was crushed and the juice was pressed immediately, and fermented in stainless steel tanks. The free run and pressing fractions were treated separately. The juice was fermented at cool temperatures to preserve the primary fruit characters. After fermentation came clarification, then blending and stabilisation
